So I have a few awesome recipe books and last Sunday I decided to use one of them - Veganomicon. 

I wanted to make a snack that I could take to work, to try and save some money. Instead of buying pre made things. So I made a batch of 'Chewy Oatmeal-Raisin Cookies'. I switched a few ingredients, like I used peppermint essence instead of vanilla (because I already had some peppermint). Some of the final cookies were left in the oven too long and got a bit burnt, but the ones that didn't were great!

One of my nearly vegan friends got married recently (the groom), the wedding was alot of fun. Also the food the put on was great!!

The groom gave the chefs his recipes so he knew the food would be good! What I had on the day was,

Starter 
Baked avocado stuffed with tofu

Main
Spiced Harissa vegetables served on a ciabatta bread

Desert
A granola slice, 2 other deserts + fresh fruit
