Ingredients Pre-made bought pizza base – 50p ½ a carton of tomato, garlic and onion Passata – 35p (or chopped tomatos, or tomato puree) ½ a courgette 1 small onion ½ teaspoon dollops of ‘Zest’ Vegan basil pesto
Step 1. Chop onions and courgette. Lightly fry for 5 minutes, till they start to brown
Step 2. Pre-heat the oven to 175 °C/Gas mark 4/350°F
Step 3. Spread a layer of Passata on the pizza base evenly
Step 4. Dollop the amount of pesto you want
Step 5. Add all the vegetables to the base, I try to get a nice spread. Then add to the oven. It should take around 15 minutes, but check after 10 minutes.
*You can add anything you like to the pizza as topping, pineapple, Vegan cheese, mustard, chilies, olives, sundried tomatoes, boiled and sliced potatoe, aubergine, kale, spinach, red onions, etc.
**If you use Vegan Cheese put it on after the Passata.
